Cut the potatoes and spam into thin matchstick-sized strips. Finely chop the green onions.
In a mixing bowl, combine the potatoes, spam, chopped green onions, cornstarch, freshly ground black pepper, and egg whites. Mix until everything is evenly coated and slightly sticky.
